How to make it

  • Cook grits in the milk, water and salt. let cool to warm.
  • Stir in seasonings and all but 1/2 cup of the cheese.
  • Stir in the egg yolks.
  • Beat whites stiff
  • Stir in 1/2 of the whites and then gently fold in the other half of the whites
  • Spoon into a greased casserole dish and sprinkle with the remaining cheese
  • Bake in a preheated 425 F oven until puffed and golden, about 25 minutes.
  • Serve immediately.
