Grits Souffle

- 1 cup grits shopping list
- 2 cups milk shopping list
- 2 cup water shopping list
- salt to taste shopping list
- 1 3/4 cup shredded cheddar cheese shopping list
- 6 large eggs separated shopping list
- salt, to taste shopping list
- pepper to taste shopping list
- nutmeg to taste shopping list
- dash Tobasco to taste shopping list
How to make it
- Cook grits in the milk, water and salt. let cool to warm.
- Stir in seasonings and all but 1/2 cup of the cheese.
- Stir in the egg yolks.
- Beat whites stiff
- Stir in 1/2 of the whites and then gently fold in the other half of the whites
- Spoon into a greased casserole dish and sprinkle with the remaining cheese
- Bake in a preheated 425 F oven until puffed and golden, about 25 minutes.
- Serve immediately.
