An adaption of a Justin Wilson's Outdoor Cajun Cooking Please note this recipe easily can be cut in half or even quartered. Great cook out party recipe. Flavors actualy taste best when prepared ahead.

Ingredients
  • 3 lbs onion chopped
  • Bacon drippings or oil to saute
  • 1 bunch parsley chooped
  • 8 cups wine
  • 1 lb mushrooms
  • 2 Tbs minced garlic
  • 1 tsp dried mint
  • 1 1/2 pints green salad olives drained
  • 16 cups tomato sauce
  • 6 Tbs worchetershire sauce
  • 8 tbs hot sauce
  • 6 tbs salt
  • 10 lbs of chicken browned
  • several pkg of spafhetti cooked

Directions
  1. Make sure you brown your chicken.
  2. This can be done in batches on the stove top.
  3. Place everything in a hugh pot and simmer everything for 5 to 6 hours.
  4. The original recipe was put on a cook stove, on a fire pit and left to cook outdoors.
  5. Serve chicken and sauce over pasta
  6. Note: I usually place all in a large heavy duty oven roaster pan and oven simmer a few hours till checken is tender and done
  7. This recipe may be made ahead of time and reheated
