Ingredients
  • 10 tbs. heated vegetable broth
  • 1/4 cup dry red wine
  • 1 tbs. tomato paste
  • 1 cup textured soy protein granules
  • 1 tsp. toasted sesame oil
  • 1/4 lb. medium firm tofu, mashed
  • For seasoning mixture:
  • 1 tbs. minced fresh garlic
  • 1 1/2 tsp. crushed fennel seeds
  • 1 tsp. red pepper
  • 1 tsp. salt
  • 1/2 tsp. fresh ground black pepper
  • 1/2 cup pure gluten powder, wheat

Directions
  1. Mix broth with wine, tomato paste and sesame oil. Stir in the textured protein granules. Allow to soak for 5 minutes.
  2. Add tofu and seasonings.
  3. Wait to add gluten powder until mixture is cool to avoid stringiness.
  4. Spread mixture out on a plate and set in refrigerator to cool if you're in a hurry.
  5. Add gluten powder and mix well with your hands. Press firmly into 10 thin patties or 14 to 20 links.
  6. Steam on a colander over simmering water for 20 minutes. Then brown in olive oil, or grill on both sides.
