Meatless Italian Sausage

- 10 tbs. heated vegetable broth shopping list
- 1/4 cup dry red wine shopping list
- 1 tbs. tomato paste shopping list
- 1 cup textured soy protein granules shopping list
- 1 tsp. toasted sesame oil shopping list
- 1/4 lb. medium firm tofu, mashed shopping list
- For seasoning mixture: shopping list
- 1 tbs. minced fresh garlic shopping list
- 1 1/2 tsp. crushed fennel seeds shopping list
- 1 tsp. red pepper shopping list
- 1 tsp. salt shopping list
- 1/2 tsp. fresh ground black pepper shopping list
- 1/2 cup pure gluten powder, wheat shopping list
How to make it
- Mix broth with wine, tomato paste and sesame oil. Stir in the textured protein granules. Allow to soak for 5 minutes.
- Add tofu and seasonings.
- Wait to add gluten powder until mixture is cool to avoid stringiness.
- Spread mixture out on a plate and set in refrigerator to cool if you're in a hurry.
- Add gluten powder and mix well with your hands. Press firmly into 10 thin patties or 14 to 20 links.
- Steam on a colander over simmering water for 20 minutes. Then brown in olive oil, or grill on both sides.
