How to make it

  • Mix broth with wine, tomato paste and sesame oil. Stir in the textured protein granules. Allow to soak for 5 minutes.
  • Add tofu and seasonings.
  • Wait to add gluten powder until mixture is cool to avoid stringiness.
  • Spread mixture out on a plate and set in refrigerator to cool if you're in a hurry.
  • Add gluten powder and mix well with your hands. Press firmly into 10 thin patties or 14 to 20 links.
  • Steam on a colander over simmering water for 20 minutes. Then brown in olive oil, or grill on both sides.
