Ingredients
  • One to two Russet or Bintjes potatoes,
  • canola oil.

Directions
  1. French fries from the Netherlands may have a beefy and pastry like fragrance somwhat like McDonald's fries. This French fries is not exactly like French fries from the Netherlands.
  2. Cut potatoes into 1 by 1 centimetre wide sticks.
  3. Pre-heat oil to about 150 degrees celsius oil temperature and fry the potatoes at 138 degrees celsius for about 3.5 to 4 minutes. Use a thermostat or thermometer to keep the oil near this temperature. Temporarily remove the deep fryer from the stove's heating if the oil temperature does not cool fast enough in the beginning. Adjust the heating element heat setting accordingly to return oil temperature back to 138 degrees celsius if needed.
  4. Cool and dry the fries for 30 to 40 minutes; this can make the fries more cripier later.
  5. Fry again at about 130 to138 degrees celsius for about 3 minutes. Use the thermometer to help keep the oil near these temperatures.
