How to make it

  • Put all ingredients in a stockpot.
  • Bring to a boil over medium heat.
  • Reduce heat, simmer, uncovered, for 30 minutes.
  • Do not cook for more than 30 minutes, it will become bitter.
  • Skim off scum as it cooks.
  • Strain into a clean pot, and chill by putting th epot in an ice bath.
  • Refrigerate until ready to use.
