Fish Stock

- 2 pounds of fish heads (avoid oily fish such as salmon) shopping list
- 1 smal onion, sliced shopping list
- 1 large leek, cleaned and thoroughly sliced shopping list
- 1-2 cloves of garlic shopping list
- 1 c dry white wine shopping list
- 6 c water/to cover shopping list
- bouquet garni shopping list
How to make it
- Put all ingredients in a stockpot.
- Bring to a boil over medium heat.
- Reduce heat, simmer, uncovered, for 30 minutes.
- Do not cook for more than 30 minutes, it will become bitter.
- Skim off scum as it cooks.
- Strain into a clean pot, and chill by putting th epot in an ice bath.
- Refrigerate until ready to use.
