Fish Stock Recipe
Fish stock for all of your soups. Never used canned!

Ingredients
  • 2 pounds of fish heads (avoid oily fish such as salmon)
  • 1 smal onion, sliced
  • 1 large leek, cleaned and thoroughly sliced
  • 1-2 cloves of garlic
  • 1 c dry white wine
  • 6 c water/to cover
  • Bouquet garni

Directions
  1. Put all ingredients in a stockpot.
  2. Bring to a boil over medium heat.
  3. Reduce heat, simmer, uncovered, for 30 minutes.
  4. Do not cook for more than 30 minutes, it will become bitter.
  5. Skim off scum as it cooks.
  6. Strain into a clean pot, and chill by putting th epot in an ice bath.
  7. Refrigerate until ready to use.
