- 2 cups white flour shopping list
- 4 whole fresh eggs shopping list
- 2 tbs kosher salt shopping list
- olive oil as needed to thin out dough shopping list
How to make it
- mix flour and salt in bowl of mixer. Add the eggs in the center and mix until it all comes together. If it is too heavy add a little olive oil to thin out a LITTLE. I use a dough hook and do this for about 5 minutes. Take the dough out and knead lightly if you need to with a little flour if it is a little sticky. I cut the dough into 4 pieces and set aside for about 30 minutes to let the flour rest. The dough is easier to roll out now. Cut into whatever shapes and sizes you like. To cook place a large pot of boiling salted water on the stovetop. Add the noodles, 1/2 at a time to cook for about 3 minutes. Remove and serve. Sometimes I do this and then dip into cold water for a few minutes and put into freezer bags and freeze until ready to use.
