How to make it

  • Preheat broiler.
  • Put mint, parsley, oil, vinegar and sugar into a blender and process until smooth and thickened.
  • Adjust sugar if desired and season with salt.
  • Trim excess fat from lamb then broil 4 minutes per side.
  • Season chops lightly with salt and pepper then serve with sauce over the top.
