Ingredients
  • 1 cup mint leaves firmly packed
  • 1 cup parsley leaves firmly packed
  • 1/3 cup olive oil
  • 1/4 cup red wine vinegar
  • 2 teaspoons sugar
  • 1 teaspoon salt
  • 4 lamb chops each 1 inch thick
  • 1 teaspoon freshly ground black pepper

Directions
  1. Preheat broiler.
  2. Put mint, parsley, oil, vinegar and sugar into a blender and process until smooth and thickened.
  3. Adjust sugar if desired and season with salt.
  4. Trim excess fat from lamb then broil 4 minutes per side.
  5. Season chops lightly with salt and pepper then serve with sauce over the top.
