Lamb With Mint Vinaigrette

- 1 cup mint leaves firmly packed shopping list
- 1 cup parsley leaves firmly packed shopping list
- 1/3 cup olive oil shopping list
- 1/4 cup red wine vinegar shopping list
- 2 teaspoons sugar shopping list
- 1 teaspoon salt shopping list
- 4 lamb chops each 1 inch thick shopping list
- 1 teaspoon freshly ground black pepper shopping list
How to make it
- Preheat broiler.
- Put mint, parsley, oil, vinegar and sugar into a blender and process until smooth and thickened.
- Adjust sugar if desired and season with salt.
- Trim excess fat from lamb then broil 4 minutes per side.
- Season chops lightly with salt and pepper then serve with sauce over the top.
