How to make it

  • Fill large pot with water
  • put frozen spinach in water
  • add jalapeno slices and juice according to your liking
  • boil spinach for 20 minutes
  • drain spinach very well i usually squeeze excess water out with my hands
  • place spinach in casserole dish
  • mix in 1/2 cup sour cream
  • cut up velveeta in small cubes and stir well
  • bake for 35 to 40 minutes at 350 degrees until cheese bubbles
  • cover with buttered cracker crumbs and bake until crackers turn golden brown

    Sounds awesome. I'm hoping it's similar to the stuff you find on Chinese buffets. 'Cept I think they use goat cheese. As good as goat's cheese is for you, I don't think my grand children would appreciate the taste as much as I do but this sounds like a great way to get them to eat more spinach. Good way to turn them on to peppers too! Soooo healthy in moderation. Thanks! :)
