Creamy spinach casserole wonderful side dish goes great with any meat my family loves it and heats up great It can also be made a lower calorie version by using low fat velveeta and fat free sour cream and I use Parkay spray on my cracker crumbs

Ingredients
  • 6 packs chopped spinach
  • 1 large size velveeta cheese
  • sliced jalapeno peppers
  • butter
  • cracker crumbs
  • sour cream

Directions
  1. Fill large pot with water
  2. put frozen spinach in water
  3. add jalapeno slices and juice according to your liking
  4. boil spinach for 20 minutes
  5. drain spinach very well i usually squeeze excess water out with my hands
  6. place spinach in casserole dish
  7. mix in 1/2 cup sour cream
  8. cut up velveeta in small cubes and stir well
  9. bake for 35 to 40 minutes at 350 degrees until cheese bubbles
  10. cover with buttered cracker crumbs and bake until crackers turn golden brown

Sounds awesome. I'm hoping it's similar to the stuff you find on Chinese buffets. 'Cept I think they use goat cheese. As good as goat's cheese is for you, I don't think my grand children would appreciate the taste as much as I do but this sounds like a great way to get them to eat more spinach. Good way to turn them on to peppers too! Soooo healthy in moderation. Thanks! :)
