I make these cool meatloaf muffins for my kids, they love the taste and the look. It is the best way to get a picky eater to eat the "Meatloaf AGAINNNN!"

Ingredients
  • 2 pounds ground beef
  • 3 tblsp. Ketchup
  • 1 egg
  • 1/2 pack crackers, finely crushed.
  • Salt to taste

Directions
  1. Preheat oven to 375*
  2. Beat egg in large mixing bowl
  3. Add ketchup, salt and crackers, mix together well
  4. Knead raw ground beef into mixture well
  5. In a muffin pan, push some of the mixture into each open spot leaving just a tiny bit of room at the top.
  6. Bake in oven at 375* for 25 minutes, glaze tops with ketchup and bake an additional 5-10 minutes.
  7. Allow to cool for about 10 minutes before serving.
