Ginger Toffee Pudding

- For the batter: shopping list
- 1 cup flour shopping list
- 2 tsp baking powder shopping list
- 2 tsp ground ginger shopping list
- 1/4 cup soft brown sugar shopping list
- 1/4 cup white sugar shopping list
- 50g butter shopping list
- 1 tbsp golden syrup shopping list
- 1/2 cup milk shopping list
- Sauce: shopping list
- 1/2 cup soft brown sugar shopping list
- 1/2 cup white sugar shopping list
- 1 tbsp golden syrup shopping list
- 2 tsp ground ginger shopping list
- 2 cups boiling water shopping list
How to make it
- Combine dry batter ingredients in a large bowl.
- Melt butter with golden syrup.
- Pour into dry ingredients with milk and mix.
- Place in greased oven-proof dish that is quite deep,
- Put sauce ingredients in a bowl.
- As you add the boiling water, stir until ingredients are mostly dissolved, then pour over the bowl of a large spoon, into batter mixture. ( this prevents the syrup creating a hole in batter)
- Bake for 45 minutes at 180oC.
- Serve with vanilla ice-cream or whipped cream.

I love ginger and you're right about n. americans not knowing about "puddings w/ flour~cake . (guess the Jello company brainwashed all of us!!). I love new things and this is one I will try in the Fall. thank you for posting. 5555555
