I realise these types of puddings are not common in Nth America, so do give it a try the next cold day you have! Commonwealth people reading this already know how great hot saucy puddings are. ;)

Ingredients
  • For the batter:
  • 1 cup flour
  • 2 tsp baking powder
  • 2 tsp ground ginger
  • 1/4 cup soft brown sugar
  • 1/4 cup white sugar
  • 50g butter
  • 1 tbsp golden syrup
  • 1/2 cup milk
  • Sauce:
  • 1/2 cup soft brown sugar
  • 1/2 cup white sugar
  • 1 tbsp golden syrup
  • 2 tsp ground ginger
  • 2 cups boiling water

Directions
  1. Combine dry batter ingredients in a large bowl.
  2. Melt butter with golden syrup.
  3. Pour into dry ingredients with milk and mix.
  4. Place in greased oven-proof dish that is quite deep,
  5. Put sauce ingredients in a bowl.
  6. As you add the boiling water, stir until ingredients are mostly dissolved, then pour over the bowl of a large spoon, into batter mixture. ( this prevents the syrup creating a hole in batter)
  7. Bake for 45 minutes at 180oC.
  8. Serve with vanilla ice-cream or whipped cream.

I love ginger and you're right about n. americans not knowing about "puddings w/ flour~cake . (guess the Jello company brainwashed all of us!!). I love new things and this is one I will try in the Fall. thank you for posting. 5555555
