Risotto Tuna Salad Recipe
A wonderful cold salad perfect for brunch or potluck.

Ingredients
  • 1 box risotto pasta (cook as directed on box)
  • 2 cans tuna fish (drained)
  • 1/4 cup mayo
  • 1/2 cup favorite balsamic vinegarette dressing
  • 1 cucumber peeled and chopped
  • 1 cup chopped carrots
  • 3 cups chopped celery
  • 1 cup chopped green onion
  • 1 can rinsed garbanzo beans
  • Fresh ground pepper and salt to taste.
  • prepare pasta
  • rinse pasta and beans
  • in a separate bowl:
  • mix tuna, mayo, dressing, salt, pepper, and chopped veggies.
  • Stir in pasta and beans.
  • Refrigerate for 1 hour before serving.
