Mini Spinach Pies

When I was little one of my favorite things was spinach pie. This is the recipe I came up with after years of perfecting it. It is truly a delicious treat. It is still one of my favorites.
Ingredients
- 16oz frozen spinach (thawed) shopping list
- 8oz mozzeralla cheese shopping list
- 4oz feta cheese shopping list
- 2 frozen pie crusts (thawed) shopping list
- 1 tsp onion powder shopping list
- 1 tbs garlic powder shopping list
- pinch of nutmeg shopping list
- 1/2 tsp salt shopping list
- 2 tsb olive oil shopping list
- 1 egg shopping list
How to make it
- Set oven to 400 degrees
- Saute spinach and olive oil in pan
- Cut 12-3" circles from unrolled pie crusts (I use a large mug)
- Greese or spray insides of large cupcake pans
- In large bowl mix egg, spices, cheeses
- Add spinach to bowl and mix well
- Line insides of greesed cupcake pans with circles from pie crusts to form little bowls
- Fill each with spinach/cheese mixture
- (optional) Top with remaining dough (smaller circles)
- Place in oven for 15-20 minutes or unil done
- Eat and enjoy!
