How to make it

  • Sprinkle raw chicken with Cajun seasoning.
  • Saute chicken in 2 or 3 tbs of olive oil until browned on both sides.
  • Remove chicken from pan.
  • Blot lightly the excess oil with a paper towel.
  • Do not remove the browned particles of chicken.
  • Add tomatoes, garlic, onions and okra to the pan and cook on medium until the okra is tender.
  • Additional liquid may need to be added, do not allow to stick.
  • Salt and pepper to taste.
