Ingredients
  • 2 tilapia fillets
  • 2 tbs cooking oil
  • 1/4 cup of flour
  • 1/2 tsp salt
  • 3/8 tsp cayenne pepper
  • 1 lemon
  • 2 tbs sugar
  • 1 small banana
  • 1/4 cup of flavored white wine (I used a strawberry & watermelon flavored White Zinfandel)

Directions
  1. *Once again, those times are just estimates. I'm really not sure how long it takes. Sorry!
  2. Slice the lemon, reserving some for decoration and using the rest to get at least 1 tbs of lemon juice.
  3. Mix the flour, salt and cayenne pepper in a bowl.
  4. Heat the oil in a skillet on medium-high.
  5. Coat the fillets with the flour mixture and then brown them in the skillet.
  6. Remove the fish, and pour the wine, lemon juice, and sugar into the skillet.
  7. While the liquid heats up, chop the banana into 1/4" slices.
  8. Simmer the slices in the liquid for about 2 minutes.
  9. Pour over the fillets and adorn with a few remaining lemon slices.
