How to make it

  • snip dried apricots into small pieces cover with water and bring to boil drain putback inot pan demerara sugar and 1/4 pt water and lemon juice
  • simmer gently until thick and syrupy leave to cool.
  • sift flour and semolina and rub in butter add sugar
  • mix to a firm dough with water knead lightly on floured board ( don't worry about the pastry crumbling a bit)
  • roll pastry out into two rectangles
  • put one piece on a greased baking sheet spread with apricot mixture leaving an inch around the sides
  • wet the sides with water and place other pastry on top
  • press edges to seal brush with milk
  • baake towards the top of the oven 200c/400f gas 6 for 20 minutescut into squares serve hot
