Ingredients
  • 4oz dried apricots
  • 2tblsp demerara sugar
  • 1/4 pint of water juice of 1/2 lemon
  • PASTRY
  • 60z self raising flour
  • 20z fine semolina
  • 40z butter
  • 1oz caster sugar (I use ordinary)
  • around a tblsp cold water milk to glaze

Directions
  1. snip dried apricots into small pieces cover with water and bring to boil drain putback inot pan demerara sugar and 1/4 pt water and lemon juice
  2. simmer gently until thick and syrupy leave to cool.
  3. sift flour and semolina and rub in butter add sugar
  4. mix to a firm dough with water knead lightly on floured board ( don't worry about the pastry crumbling a bit)
  5. roll pastry out into two rectangles
  6. put one piece on a greased baking sheet spread with apricot mixture leaving an inch around the sides
  7. wet the sides with water and place other pastry on top
  8. press edges to seal brush with milk
  9. baake towards the top of the oven 200c/400f gas 6 for 20 minutescut into squares serve hot
