Ingredients
  • 1 stick butter, softened
  • 1/3 cup Masa Harina flour
  • 1/4 cup water
  • 1 box frozen corn, thawed (10 oz.)
  • 1/3 cup sugar
  • 4 tbls. yellow cornmeal
  • 2 tbls. whipping cream
  • 1/4 tsp. baking powder
  • 1/4 tsp. salt

Directions
  1. Preheat oven to 350
  2. Beat butter with hand mixer until fluffy
  3. Gradually beat in Masa Harina
  4. Beat in water on low speed
  5. Put corn in food processor and pulse until chopped coarse
  6. Stir into masa mixture
  7. In another mixing bowl, stir together sugar, cornmeal, cream, baking powder and salt
  8. Stir into corn mixture
  9. Spread into greased 8-inch-square baking pan
  10. Cover with foil
  11. Place in larger pan and pour boiling water halfway up the side of the smaller pan
  12. Bake for 50 minutes or until set
  13. Uncover and let stand 15 minutes
