Beef Kalio Recipe
This is a rich Indian dish with beef and potatoes, apart from the first stage of frying you sling everything in the pot, stir it and leave it to it's own devices. Easy!

Ingredients
  • Oil for deep frying
  • 2 large onions, sliced
  • 4 medium sized potatoes, quartered
  • 800g (1Ib 12oz) cubed beef
  • 3 tsp garlic, crushed
  • 3 tsp ginger, grated
  • 4 green chillies, finely sliced
  • 250g (9oz) tomatoes, peeled and chopped (tinned tomatoes are good)
  • 2 tbsp tomato puree (paste)
  • 1 tsp garam masala
  • half tsp turmeric powder
  • half or 1 tsp chilli powder
  • 3 tsp coriander powder
  • 150g (5 fl oz) plain yoghurt
  • pinch of saffron
  • 6 cloves
  • 6 black peppercorns
  • 4 cardamom pods, opened
  • 1 inch cinnamon stick
  • handful coriander (cilantro) leaves, chopped
  • salt to taste

Directions
  1. Deep fry the onions and potatoes until golden brown - the potatoes do not need to be fully cooked at this stage. (note: I shallow fry rather than deep fry, but that's just because I'm scared of my deep fat fryer!)
  2. Remove the onions and potatoes and set aside.
  3. Put all ingredients into a large saucepan adding the onions and potatoes, mix, cover and simmer on a low heat for approx 1 hour, until beef is tender. (note: recipe calls for 1 hour cooking time but I usually cook for about 1 hr and a half, long slow cooking works best I think. Actually it's just occurred to me that this could work well in the crockpot, the potatoes would probably fall apart but meh! serving it with plenty of pilau rice nobody would notice anyway!).
