How to make it

  • Deep fry the onions and potatoes until golden brown - the potatoes do not need to be fully cooked at this stage. (note: I shallow fry rather than deep fry, but that's just because I'm scared of my deep fat fryer!)
  • Remove the onions and potatoes and set aside.
  • Put all ingredients into a large saucepan adding the onions and potatoes, mix, cover and simmer on a low heat for approx 1 hour, until beef is tender. (note: recipe calls for 1 hour cooking time but I usually cook for about 1 hr and a half, long slow cooking works best I think. Actually it's just occurred to me that this could work well in the crockpot, the potatoes would probably fall apart but meh! serving it with plenty of pilau rice nobody would notice anyway!).
