Ingredients
  • 1 small fresh pineapple, peeled, and cored , cut in a container reserve any pinapple liquid
  • 1 Tbsp. olive oil
  • 2 cups cooked long grain rice
  • 12 oz. cooked ham, coarsely chopped
  • 1 cup chopped or sliced sweet peppers
  • 1 jalapeƱo pepper, sliced
  • 1/2 15-oz. can black beans, rinsed and drained (3/4 cup)
  • Lime Wedges

Directions
  1. Cut pineapple in 3/4-inch slices.
  2. Heat oil in 12-inch skillet over medium-high heat; add pineapple slices.
  3. Cook 3 to 4 minutes or until beginning to brown.
  4. Divide pineapple among four plates.
  5. Meanwhile, prepare rice according to package directions to make 2 cups
  6. Add ham and peppers to skillet; cook 3 minutes, stirring occasionally.
  7. Add beans and rice.
  8. Cook, stirring occasionally, 3 minutes or until heated through.
  9. Stir in reserved pineapple juice if there is any
  10. Serve with lime wedges.
