great soup that everyone will enjoy. the different sizes of the vegies gives it a nice texture.

Ingredients
  • 2 grated carrots
  • a little fresh parsley
  • 2 onions cubed
  • 3 cloves crushed garlic
  • 6-8 cups water
  • 4 potatoes cubed
  • 2 potatoes small diced
  • 2 carrots sliced
  • 2 celery sliced
  • salt
  • pepper
  • soup mix (optional)

Directions
  1. saute' the onions, grated carrots, parsley and garlic in a little oil.
  2. add water, the rest of the vegetables, and spices.
  3. bring to boil and simmer for 1 1/2 to 2 hours
