How to make it

  • Preheat and prep grill
  • Wash potatoes and place in plastic wrap and cook in microwave for 5 minutes or until slightly soft to touch
  • Prep and core pineapple, cut into medium sized chunks, drizzle with olive oil, toss to coat
  • Cut sweet onion in half, then cut each half into 5-6 wedges
  • Cut and clean out peppers, then cut in half then half again then cut into medium sized squares
  • Cut boneless chicken breasts into medium sized chunks
  • Place chicken into a bowl adding the Italian dressing, lemon juice, Greek seasoning, salt, pepper, and olive oil. Let marinate for 15-20 minutes
  • Place peppers in a bowl and drizzle olive oil, toss to coat
  • Place onion in a bowl and drizzle with olive oil, toss to coat
  • Lightly spray skewers with non-stick cooking spray, arrange ingredients on skewers, alternating between vegetables and meat
  • Reserve left over chicken marinate for basting skewers during grilling
  • Grill skewers for 15-20 minutes on medium high to medium heat until cooked or juices run clear in chicken, baste skewers with marinate with every turn to keep moist and flavorful
  • Serve immediately or wrap in aluminum foil until ready to serve
