Great spring/ summer time grill recipe. This is so easy to put together ready to serve your guests no matter the occasion. These colorful and favorful kabobs will have your guests asking for more.

Ingredients
  • 4 boneless chicken breasts
  • 1 box gourmet baby potatoes (Red or Yukon gold)
  • 1 sweet onion
  • 1 fresh pineapple
  • 1 red bell pepper
  • 1 yellow bell pepper
  • 1 orange bell pepper
  • 1 bottle of Italian dressing
  • 1 tablespoon Cavenders All Purpose Greek Seasoning
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 1/4 cup lemon juice
  • 1/4 of extra virgin olive oil
  • 6-8 kabob skewers (if using wooden skewers- soak in water for 30 minutes before applying to grilling surface)
  • Non stick cooking spray

Directions
  1. Preheat and prep grill
  2. Wash potatoes and place in plastic wrap and cook in microwave for 5 minutes or until slightly soft to touch
  3. Prep and core pineapple, cut into medium sized chunks, drizzle with olive oil, toss to coat
  4. Cut sweet onion in half, then cut each half into 5-6 wedges
  5. Cut and clean out peppers, then cut in half then half again then cut into medium sized squares
  6. Cut boneless chicken breasts into medium sized chunks
  7. Place chicken into a bowl adding the Italian dressing, lemon juice, Greek seasoning, salt, pepper, and olive oil. Let marinate for 15-20 minutes
  8. Place peppers in a bowl and drizzle olive oil, toss to coat
  9. Place onion in a bowl and drizzle with olive oil, toss to coat
  10. Lightly spray skewers with non-stick cooking spray, arrange ingredients on skewers, alternating between vegetables and meat
  11. Reserve left over chicken marinate for basting skewers during grilling
  12. Grill skewers for 15-20 minutes on medium high to medium heat until cooked or juices run clear in chicken, baste skewers with marinate with every turn to keep moist and flavorful
  13. Serve immediately or wrap in aluminum foil until ready to serve
