A light tomato soup that i picked up at a cooking class i took. we all love it and I'm sure you will too.

Ingredients
  • 2 med. onions
  • 4 cloves garlic crushed
  • 6 cups chopped and peeled tomatoes
  • 1 tablespoon sugar
  • 1 tablespoon vinegar
  • 3/4 teaspoon hot chili
  • salt and pepper to taste
  • 4 cups chicken stock

Directions
  1. Saute' onions and garlic in oil
  2. add chopped tomatoes and saute' for 10 min.
  3. add rest of ingredients and blend.
  4. bring to boil and simmer for 1-11/2 hours.
