Ingredients
  • 1 Cup Butter
  • 1/2 Cup Sugar
  • 1 oz Cognac
  • 1 teaspoon Baking Powder
  • 1 Egg
  • 2 Cups all-purpose Flour
  • 1-12oz Jar Pineapple Preserves
  • 12 Eggs,separtated
  • 1-1pound box powdered sugar
  • 1 teaspoon Baking Powder
  • 1 oz Cognac
  • Almond extract
  • 1-1/2 pounds Almonds,blanched and finely ground

Directions
  1. Combine the butter and sugar together until well-blended.
  2. Add 1 oz of Cognac,baking powder and 1 egg.
  3. Mix thoroughly.
  4. Now gradually add the flour and work together to form a soft dough.
  5. Line the bottom of a 10x14" oblong pan with the dough.
  6. Spread the pineapple preserves evenly over the dough.
  7. Beat together the 12 eggs yolks,powdered sugar,baking powder,remaining cognac,and almond extract.
  8. Add the almonds and beat thoroughly.
  9. In a separate bowl beat the egg whites until stiff but not dry.
  10. Fold the egg mixture into the beaten egg whites.
  11. Carefully spread this over the pineapple preserves.
  12. Bake in a 350 degree oven for about 40 minutes
