How to make it

  • Combine the butter and sugar together until well-blended.
  • Add 1 oz of Cognac,baking powder and 1 egg.
  • Mix thoroughly.
  • Now gradually add the flour and work together to form a soft dough.
  • Line the bottom of a 10x14" oblong pan with the dough.
  • Spread the pineapple preserves evenly over the dough.
  • Beat together the 12 eggs yolks,powdered sugar,baking powder,remaining cognac,and almond extract.
  • Add the almonds and beat thoroughly.
  • In a separate bowl beat the egg whites until stiff but not dry.
  • Fold the egg mixture into the beaten egg whites.
  • Carefully spread this over the pineapple preserves.
  • Bake in a 350 degree oven for about 40 minutes
