Avocado Corn Cocktail Recipe

Ingredients

1 ripe avocado

2 to 3 tbsp fresh lime juice

1 ripe red tomato

1 ear sweet corn

1 scallion, fine dice - or fine dice sweet onion

1 to 2 jalapeno peppers - seeded and minced

1/4 cup chopped fresh cilantro (I hate cilantro so I leave this out)

Coarse salt and freshly ground black pepper

Directions

Cut avocado into 1/4-in dice and place in glass mixing bowl.

Toss with lime juice.

Spoon diced tomato on top of avocado.

Cut kernels off corn. Add corn to bowl.

**You can prepare to this point up to 2 hours in advance. Cover and chill.**

Just before serving, add jalapeno and cilantro, mix well. Season to taste with more lime juice if necessary, add salt and pepper.

Serve on top of chile-rubbed shrimp.

Thanks. We always do grilled corn, but this is way better. And no half eaten ears leftover.
