How to make it

  • Cut avocado into 1/4-in dice and place in glass mixing bowl.
  • Toss with lime juice.
  • Spoon diced tomato on top of avocado.
  • Cut kernels off corn. Add corn to bowl.
  • **You can prepare to this point up to 2 hours in advance. Cover and chill.**
  • Just before serving, add jalapeno and cilantro, mix well. Season to taste with more lime juice if necessary, add salt and pepper.
  • Serve on top of chile-rubbed shrimp.
  • Get ready to rumble!
