Avocado Corn Cocktail

- 1 ripe avocado shopping list
- 2 to 3 tbsp fresh lime juice shopping list
- 1 ripe red tomato shopping list
- 1 ear sweet corn shopping list
- 1 scallion, fine dice - or fine dice sweet onion shopping list
- 1 to 2 jalapeno peppers - seeded and minced shopping list
- 1/4 cup chopped fresh cilantro (I hate cilantro so I leave this out) shopping list
- coarse salt and freshly ground black pepper shopping list
How to make it
- Cut avocado into 1/4-in dice and place in glass mixing bowl.
- Toss with lime juice.
- Spoon diced tomato on top of avocado.
- Cut kernels off corn. Add corn to bowl.
- **You can prepare to this point up to 2 hours in advance. Cover and chill.**
- Just before serving, add jalapeno and cilantro, mix well. Season to taste with more lime juice if necessary, add salt and pepper.
- Serve on top of chile-rubbed shrimp.
- Get ready to rumble!

Thanks. We always do grilled corn, but this is way better. And no half eaten ears leftover.
