Avocado Corn Cocktail Recipe
This is the salsa to go with the Chile-Rubbed Shrimp. I can think of all kinds of other uses for this though! It's wonderful! I always double or even triple this recipe because it gets mowed!! From Raichlen's Indoor! Grilling

Ingredients
  • 1 ripe avocado
  • 2 to 3 tbsp fresh lime juice
  • 1 ripe red tomato
  • 1 ear sweet corn
  • 1 scallion, fine dice - or fine dice sweet onion
  • 1 to 2 jalapeno peppers - seeded and minced
  • 1/4 cup chopped fresh cilantro (I hate cilantro so I leave this out)
  • Coarse salt and freshly ground black pepper

Directions
  1. Cut avocado into 1/4-in dice and place in glass mixing bowl.
  2. Toss with lime juice.
  3. Spoon diced tomato on top of avocado.
  4. Cut kernels off corn. Add corn to bowl.
  5. **You can prepare to this point up to 2 hours in advance. Cover and chill.**
  6. Just before serving, add jalapeno and cilantro, mix well. Season to taste with more lime juice if necessary, add salt and pepper.
  7. Serve on top of chile-rubbed shrimp.
  8. Get ready to rumble!
