Diet Gourmet Crunchy Couscous Salad

- 1 c water shopping list
- 3/4 t cinammon shopping list
- 1/2 t ground ginger shopping list
- 1/2 t cumin shopping list
- 1/4 t turmeric shopping list
- 1 T evoo shopping list
- 1 c couscous shopping list
- 1 granny smith apple finely diced shopping list
- 1/4 cup fresh lemon juice shopping list
- 1 c cooked chickpeas shopping list
- 1/4 c chopped green onion shopping list
- 1/4 c toasted sunflower seeds shopping list
- 1/2 c currants shopping list
- 1/2 t salt shopping list
- 1/2 t white pepper shopping list
How to make it
- In large saucepan combine water, cinnamon, ginger, cumin, turmeric & half Tablespoon evoo.
- Bring to a boil.
- Slowly add couscous.
- Stir 1 minute.
- Cover & remove from heat.
- Let stand 15 minutes.
- Fluff with fork once couscous has cooled.
- In large bowl, combine apple, lemon juice, remaining evoo, chickpeas, onion, seeds, currants, s&p.
- Add couscous & toss gently to combine.
