How to make it

  • In large saucepan combine water, cinnamon, ginger, cumin, turmeric & half Tablespoon evoo.
  • Bring to a boil.
  • Slowly add couscous.
  • Stir 1 minute.
  • Cover & remove from heat.
  • Let stand 15 minutes.
  • Fluff with fork once couscous has cooled.
  • In large bowl, combine apple, lemon juice, remaining evoo, chickpeas, onion, seeds, currants, s&p.
  • Add couscous & toss gently to combine.
