Mexican Corn Chowder Recipe
Simple to make. A nice brothy chowder, not overly creamy. Can make as mild or as spicy as you want. Make some guacamole and chips for the side and you've got dinner.

Ingredients
  • 3 tablespoons butter
  • 1 large onion
  • 1 medium green bell pepper
  • 1 garlic clove
  • 1 can chopped green chiles (hot or mild)
  • 1 can whole tomatoes, drain & break up
  • 2 cans creamed corn
  • 1 can regular corn
  • 32 oz chicken stock
  • 2 cups chopped cooked chicken
  • 1 tablespoon taco sauce (Cholula)
  • 1/2 cup shredded jack cheese
  • juice of 2 limes
  • cilantro, jalapenos, sour cream to taste (garnish)

Directions
  1. Cook butter, onion, bell pepper, garlic over medium heat for 3-5 minutes
  2. Add chiles & tomatoes, blend well
  3. Add everything else and simmer 30+ minutes
