Chicken Vermicelli Recipe

Ingredients
  • 2 to 3 lb. fryer
  • 1 sm. onion
  • 1 sm. green pepper
  • 1 stick oleo
  • 1 ( 7 oz.) pkg. vermicelli
  • 1 ( 16 oz) can English peas drained
  • 1 (8 oz.) can mushrooms drained
  • 1 lb. Velveeta cheese
  • 1 can Ro-tel tomatoes

Directions
  1. Boil chicken until done remove from bone
  2. Reserve liquid
  3. In a large skillet Saute onion and bell pepper in oleo
  4. Boil vermicelli in reserved liquid then drain but hold out a cup or two
  5. in skillet add peas, mushrooms, cheese cut in sm. pieces , rotel, vermicelli and chicken
  6. mix carefully if it seems alittle dry add some of the reserved liquid
  7. put in Large casserole dish and bake at 350 for 30 mins
