Moms Macaroni And Cheese

- 2 c. pasta (rotini, macaroni, penni pasta) I like to have two different kinds and multicolored pasta adds interest. shopping list
- 2 T. butter, plus 2 T. cut into four pieces. shopping list
- 1/2 t. salt shopping list
- 1/4 t. cayenne pepper shopping list
- 2 T. all purpose floud shopping list
- 1 1/2 c. milk shopping list
- 3 c. assorted shredded cheese (mozarella, cheddar, colby, jack, assiago, parmesean,swiss) shopping list
- 2 T. dried chopped onions shopping list
How to make it
- Pre-heat oven to 350 degrees.
- Bring salted water to a boil in a large saucepan to cook pasta to al dente. Drain and rinse. Set aside
- In smaller saucepan, melt butter when melted add salt and cayenne pepper and flour mix over low heat. Add milk to make a thin white sauce. Set aside.
- In a 2 qt. casserole which has been sprayed with cooking spray; add 1/2 of the pasta.
- Sprinkle with the dried onions
- Add 1/2 of the shredded cheeses.
- Add remaining pasta.
- Cover with remaining cheese.
- Pour white sauce over the top; and add butter pieces.
- At this point, I like to cover with some additional cheddar cheese for a crusty top.
- Bake in the oven for 35-45 minutes.
