A family favorite, comfort food good on a cold day.

Ingredients
  • 2 c. pasta (rotini, macaroni, penni pasta) I like to have two different kinds and multicolored pasta adds interest.
  • 2 T. butter, plus 2 T. cut into four pieces.
  • 1/2 t. salt
  • 1/4 t. cayenne pepper
  • 2 T. all purpose floud
  • 1 1/2 c. milk
  • 3 c. assorted shredded cheese (mozarella, cheddar, colby, jack, assiago, parmesean,swiss)
  • 2 T. dried chopped onions

Directions
  1. Pre-heat oven to 350 degrees.
  2. Bring salted water to a boil in a large saucepan to cook pasta to al dente. Drain and rinse. Set aside
  3. In smaller saucepan, melt butter when melted add salt and cayenne pepper and flour mix over low heat. Add milk to make a thin white sauce. Set aside.
  4. In a 2 qt. casserole which has been sprayed with cooking spray; add 1/2 of the pasta.
  5. Sprinkle with the dried onions
  6. Add 1/2 of the shredded cheeses.
  7. Add remaining pasta.
  8. Cover with remaining cheese.
  9. Pour white sauce over the top; and add butter pieces.
  10. At this point, I like to cover with some additional cheddar cheese for a crusty top.
  11. Bake in the oven for 35-45 minutes.
