How to make it

  • 1- Rub chicke with salt and pepper. In a large heavy skillet or 5-QT. Dutch oven with a tight-fitting lid, heat oil over moderate heat about 2- MINS. Add chicken and cook, turning occasionally, until brown-8 to 10 minutes. Remove chicken and sit asdide.
  • 2- Add onion and cook until soft-about 5 minutes. Add green pepper and celery and cook, stirring frequently, until tender-about 6 minutes. Stir in garlic and oregano and cook 1 minute more.
  • 3- Return chicken to pan. Add tomatoes, tomato paste, and wine, cook covered over moderately low heat until chicken is tender-35 to 40 minutes.
  • 4- Serve over short pasta, or cooked rice.
