Chicken Cacciatore

- 1 broiler-fryer cut up shopping list
- 1 TPS salt shopping list
- 1/2 TPS pepper shopping list
- 3 TBS olive oil shopping list
- 1 large yellow onion,halved lengthwise and thinly sliced shopping list
- 1 lareg sweet green pepper,cored,seeded, and thinly sliced shopping list
- 1 medium-size stalk celery, thinly sliced shopping list
- 2 cloves garlic, minced shopping list
- 2 TPS. dried oregano, crumbled shopping list
- 2 cans whole tomatoes (28 oz. each) drained and chopped shopping list
- 2 TBS. tomato paste shopping list
- 1/2 cup dry red wine shopping list
How to make it
- 1- Rub chicke with salt and pepper. In a large heavy skillet or 5-QT. Dutch oven with a tight-fitting lid, heat oil over moderate heat about 2- MINS. Add chicken and cook, turning occasionally, until brown-8 to 10 minutes. Remove chicken and sit asdide.
- 2- Add onion and cook until soft-about 5 minutes. Add green pepper and celery and cook, stirring frequently, until tender-about 6 minutes. Stir in garlic and oregano and cook 1 minute more.
- 3- Return chicken to pan. Add tomatoes, tomato paste, and wine, cook covered over moderately low heat until chicken is tender-35 to 40 minutes.
- 4- Serve over short pasta, or cooked rice.
