  • Potatoes
  • Beef Suet( has a higher melting point,you can get it hotter without smoking)
  • Powdered Mustard

Directions
  1. Take the potatoes,peel and cut lengthwise into sections about 1/2 inch thick.
  2. Dry,by rubbing in kitchen towel.
  3. Do not soak the potatoes in ice water or salted ice water.
  4. Doing this only makes the potatoes absorb more water and in turn makes them absorb grease too readily when cooked.
  5. Heat your beef grease to about 400 degrees.
  6. Beef grease makes the fries crisp and flaky.
  7. Do not use Lard or Shortening.
  8. Place the potatoes in the french fry basket,and put them down in the grease.
  9. Leave the potatoes until they are cooked and have a thin crisp skin formed on them(not all the way done)not a brown skin just a thin pale colored skin.
  10. This takes about 7 to 10 minutes.
  11. Remove them from the grease and let them drain,for about 2 to 4 minutes,until the grease is up to around 400 degrees again.
  12. Place the potatoes back in and leave them in until slightly brown.
  13. Shake a bit as the brown.
  14. This takes about 1-1/2 minutes.
  15. Take them out and let them drain on paper towel ,place over a brown paper bag.
  16. Sprinkle lightly with powdered mustard.
