This soup can be put together in minutes and tastes like you have been cooking all day.

Ingredients
  • 1 tbsp oil
  • 1 lb ground beef
  • 1med onion chopped
  • 1 can corn
  • 1 can black beans
  • 1 can kidney beans
  • 1 cup salsa
  • 1 lg can chopped tomato
  • 2 tbsp taco seasoning
  • 4 cups beef stock
  • a couple splashes hot sauce
  • Grated cheddar cheese to serve

Directions
  1. Brown ground beef and onion in oil in lg sauce pan.
  2. Add remaining ingredients (except cheese). Bring to a boil.
  3. simmer partially covered 20-30 min to blend flavors.
  4. Serve topped with grated cheese.
