Apricot Glazed Pork Medallions

- 1lb pork tenderloin,cut crosswise into 1/2" thick rounds shopping list
- salt and fresh ground black pepper shopping list
- 2tsp sesame oil shopping list
- 11/4c apricot preserves shopping list
- 1/4c tamari sauce shopping list
- 1Tbs chopped pickled ginger shopping list
How to make it
- Season both sides of pork with salt and pepper. Heat oil in lg. skillet over med-high heat. Add pork and sear 2 min per side. Add apricot preserves,tamari sauce,and ginger and bring to a simmer. Simmer 5 mins,until pork is cooked through and sauce reduces.

Yummy, apricot preserves on pork sounds delicious to me! I haven't tried it yet but my sistr does it all the time. I will try your recipe for Sunday.
