Apricot Glazed Pork Medallions Recipe

Ingredients
  • 1lb pork tenderloin,cut crosswise into 1/2" thick rounds
  • salt and fresh ground black pepper
  • 2tsp sesame oil
  • 11/4c apricot preserves
  • 1/4c tamari sauce
  • 1Tbs chopped pickled ginger

Directions
  1. Season both sides of pork with salt and pepper. Heat oil in lg. skillet over med-high heat. Add pork and sear 2 min per side. Add apricot preserves,tamari sauce,and ginger and bring to a simmer. Simmer 5 mins,until pork is cooked through and sauce reduces.

Yummy, apricot preserves on pork sounds delicious to me! I haven't tried it yet but my sistr does it all the time. I will try your recipe for Sunday.
