Ingredients
  • 12 oz firm silken tofu
  • 8 oz vegan cream cheese
  • 1 c canned pumpkin
  • 1 c sugar
  • 3 tbsp flour
  • 1/2 tsp ground ginger
  • 1/2 tsp nutmeg
  • 1 1/2 tsp cinnamon
  • 1/8 tsp salt
  • 1/4 tsp baking soda
  • 1 9-inch prepared vegan graham crust
  • dairy-free whipped topping, for garnish

Directions
  1. Preheat oven to 350 F.
  2. Puree all ingredients except crust in food processor, pour mixture into prepared vegan graham crust.
  3. Bake for 50 minutes.
  4. Allow to cool for 30 minutes.
  5. Top with vegan whipped cream and enjoy.
