Ingredients
  • 1 1/2 c flour
  • 1/2 c sugar
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1/2 c oil
  • 1 tbsp vanilla
  • 1 tbsp maple syrup
  • Egg replacer for 1 egg
  • Cinnamon sugar to coat

Directions
  1. Preheat oven to 375 F.
  2. Mix dry ingredients in bowl.
  3. Mix wet ingredients in separate bowl.
  4. Add wet ingredients to dry.
  5. Form dough into a ball. (If it doesn’t stick properly, add a little water and mix well).
  6. Form dough into 1-inch balls and roll in cinnamon sugar.
  7. Place on ungreased cookie sheet and flatten slightly.
  8. Bake about 7 minutes.
  9. Makes about 18 cookies.
