How to make it

  • Reserve 1 cup pineapple juice from the pineapple chunks. Drain all the rest of the juice from the pineapple, Mandarin oranges, and cherries. (I just chuck them all in a colander, cherries first).
  • Slice the bananas approx. 1/8" thick.
  • Empty the pudding mix into a large bowl. Whisk in the reserved pineapple juice. Continue whisking for a total of at least 2 minutes. You can do this with a hand mixer, but I don't think it turns out as well, and you have one extra thing to clean (two beaters instead of one whisk). I would not use a stand mixer, as there isn't enough volume for the stand mixer to work its magic.
  • Stir in the fruit.
  • Serve immediately or cover and refrigerate. Keeps a couple of days.
