Susan Suthers Fruit Salad Recipe
This is a recipe my mom picked up from a family friend back when I was just a little tyke. I've grown up eating it along salads and at cookouts and potlucks. It's easy, fast, tasty, and tends to be a real crowd-pleaser.

Ingredients
  • 2 (14.5 oz) cans pineapple chunks in juice
  • 1 (11 oz) can Mandarin oranges (tangerines) in juice
  • 1 (10 oz) jar maraschino cherries
  • 3 bananas
  • 1 (3.4 oz) box instant Jello vanilla pudding

Directions
  1. Reserve 1 cup pineapple juice from the pineapple chunks. Drain all the rest of the juice from the pineapple, Mandarin oranges, and cherries. (I just chuck them all in a colander, cherries first).
  2. Slice the bananas approx. 1/8" thick.
  3. Empty the pudding mix into a large bowl. Whisk in the reserved pineapple juice. Continue whisking for a total of at least 2 minutes. You can do this with a hand mixer, but I don't think it turns out as well, and you have one extra thing to clean (two beaters instead of one whisk). I would not use a stand mixer, as there isn't enough volume for the stand mixer to work its magic.
  4. Stir in the fruit.
  5. Serve immediately or cover and refrigerate. Keeps a couple of days.
