- 2 (14.5 oz) cans pineapple chunks in juice shopping list
- 1 (11 oz) can mandarin oranges (tangerines) in juice shopping list
- 1 (10 oz) jar maraschino cherries shopping list
- 3 bananas shopping list
- 1 (3.4 oz) box instant Jello vanilla pudding shopping list
How to make it
- Reserve 1 cup pineapple juice from the pineapple chunks. Drain all the rest of the juice from the pineapple, Mandarin oranges, and cherries. (I just chuck them all in a colander, cherries first).
- Slice the bananas approx. 1/8" thick.
- Empty the pudding mix into a large bowl. Whisk in the reserved pineapple juice. Continue whisking for a total of at least 2 minutes. You can do this with a hand mixer, but I don't think it turns out as well, and you have one extra thing to clean (two beaters instead of one whisk). I would not use a stand mixer, as there isn't enough volume for the stand mixer to work its magic.
- Stir in the fruit.
- Serve immediately or cover and refrigerate. Keeps a couple of days.
