These pancakes are probably the most healthy pancakes, if made properly, you're going to eat. They're especially vegan for my taste and for others too. They fill you up and make for a great weekend breakfast.

Using Whole Foods flour and soy milk, this batter came out thick like muffin batter! Needed to add 6 Tbsp water to thin it out. Then it made delicious pancakes. Don't be stingy on the non-stick spray.
