Soy Mayonnaise Recipe

Ingredients
  • 6 Oz. Firm Silken Tofu, drained
  • 1 1/2 Tbsp. White Wine Vinegar
  • 1/4 Tsp. Dry Mustard
  • 1/2 Tsp. Salt
  • Pinch of sugar or other natural sweetener
  • 3 Tbsp. Corn Oil or other neutral-tasting oil

Directions
  1. Place the tofu, vinegar, mustard, salt, and sugar into a blender or food processor and blend until smooth. While the machine is running, slowly add the oil. Taste and adjust any seasonings.
  2. Transfer to a glass jar or other container with a tight-fitting lid. Cover and refrigerate until ready to use.
