Soy Mayonnaise

- 6 Oz. firm silken tofu, drained shopping list
- 1 1/2 Tbsp. white wine vinegar shopping list
- 1/4 Tsp. dry mustard shopping list
- 1/2 Tsp. salt shopping list
- Pinch of sugar or other natural sweetener shopping list
- 3 Tbsp. corn oil or other neutral-tasting oil shopping list
How to make it
- Place the tofu, vinegar, mustard, salt, and sugar into a blender or food processor and blend until smooth. While the machine is running, slowly add the oil. Taste and adjust any seasonings.
- Transfer to a glass jar or other container with a tight-fitting lid. Cover and refrigerate until ready to use.
