Don't you just love a cup (or bowl!) of smooth, creamy, and rich vichysoise? I know its an oldie of a recipe, but it IS a goodie!

Ingredients
  • 1 1/2 cups leeks, minced, including 3" of green tops
  • 3 cups potatoes, peeled and sliced
  • 3 cups boiling water
  • 4 chicken bouillon cubes
  • 3 tablespoons butter
  • 1 cup light cream
  • 1 cup milk
  • 1 teaspoon salt
  • 1/4 teaspoon pepper
  • 2 tablespoons chives, minced

Directions
  1. Cook leeks and potatoes in boiling water unti very tender. Do not drain. Press through sieve into double boiler. Add rest of ingredients (except chives). Mix well and reheat.
  2. Serve chilled and topped with chives.
