BLACK EYED PEA SALSA This is a recipe I obtained from an Estate sale. I obtained it when I purchased the family collection from the Elmquist Estate in Heath, Texas in 1981.

Ingredients
  • 1 can black-eyed peas rinsed and drained
  • 1 can black beans rinsed and drained
  • 1 can shoe peg corn drained
  • 1-1/3 cup mild salsa
  • 1 cup medium salsa
  • 3/4 cup chopped green pepper
  • 1/2 cup chopped green onions
  • 1 can chopped ripe olives drained
  • 1 jalapeno pepper seeded and chopped
  • 1 envelope Italian salad dressing mix
  • 1 teaspoon ground cumin
  • 1/2 teaspoon garlic powder
  • Tortilla chips

Directions
  1. Combine all ingredients except tortilla chips and stir until well combined.
  2. Allow to sit at least thirty minutes before serving to meld flavors.
  3. Serve with tortilla chips.
