Raison Pecan And Goat Cheese Salad Recipe
Refreshing salad that makes a great lunch. If you are not a fan of goat cheese try this salad, it will change your mind.

Ingredients
  • Organic Spring Mix, 1 bag: buy at grocery store
  • 4 oz. Goat Cheese
  • About 2 oz of Candied Pecans. I usually use a little more. (You can get these from Trader Joe’s or just use regular pecans)
  • 2 oz. dried raisons (you can also use cranberries)
  • About 1/3 cup Annie’s Raspberry Vinaigrette (you can also use Balsamic Vinaigrette)

Directions
  1. Wash lettuce. Place in large bowl
  2. Open Goat Cheese and crumble on top of salad. Add the pecans and raisons.
  3. Pour Vinaigrette over salad. Use two forks to mix the salad together. The dressing should combine with the goat cheese, so that the whole salad has bits of goat cheese through out it. This salad is best when the goat cheese has dressing on it.
