Corned Beef Hash Pie Recipe
A new update to corned beef hash only in pie form. Something for that quick put together meal.

Ingredients
  • 1-9-in.deep dish frozen pie crust
  • 3 eggs
  • 1/4 cup mayonnaise
  • 1/2 tsp. salt
  • 1/2 tsp. pepper
  • 5 cups frozen O'Brien Potatoes with onions and peppers, thawed
  • 1 (12-oz.) can corned beef, crumbled

Directions
  1. Place oven rack in lowest position in oven.
  2. Heat oven to 425 degrees.
  3. Place pie crust on lowest level and bake at 425 degrees for 5 minutes.
  4. Meanwhile, beat eggs in a large bowl.
  5. Add mayonnaise, salt and pepper; blend well.
  6. Add potatoes and corned beef; mix well.
  7. Remove partially baked crust from oven.
  8. Reduce oven temp to 375 degrees.
  9. Spoon potato mixture into partially baked crust.
  10. Return to lowest oven rack; bake at 375 degrees for 25 minutes.
  11. Cover top of pie with foil to prevent excessive browning.
  12. Bake an additional 20-30 minutes or until potatoes are tender and crust is deep golden brown.
  13. Cut into wedges and serve.
