This recipe is from "The Garden of Vegan" an goes great with "Nutty Pie Crust ."

Ingredients
  • 2 cups chocolate chips
  • 1 tbsp. soy milk
  • 2 12-oz. pkgs. soft or silken tofu
  • 1 tsp. vanilla extract
  • 1 pie crust

Directions
  1. In a double broiler, melt the chocolate chips and soymilk, stirring occasionally until smooth.
  2. In a blender or food processor, blend the tofu, vanilla, and chocolate mixture until smooth.
  3. Pour into pie crust and let chill for 3-4 hours before serving. Makes 1 pie.
