Stove Top Ratatouille

My oven was on the fritz so I couldn't roast the veggies, so, a quick saute and it works.... not as good as roasting, but it works
Ingredients
- 1 vadalia onion, chunk cut shopping list
- 2 sm eggplants sliced into rounds shopping list
- 3 sm zucchini sliced into rounds shopping list
- cherry tomatoes, shopping list
- Baby portabellas shopping list
- 1 to 2 tsp french herb rub shopping list
- sea salt shopping list
- fresh cracked pepper shopping list
- 1 - 2 Tbs olive oil shopping list
- Shredded swiss cheese shopping list
How to make it
- Put olive oil in a saute pan, add onions and saute until almost transparent.
- Add eggplants, zucchini, mushrooms, french herb rub, salt and pepper, saute till there is a little color
- Add cherry tomatoes, heat until they pop.
- Dish up and sprinkle with swiss cheese
