My oven was on the fritz so I couldn't roast the veggies, so, a quick saute and it works.... not as good as roasting, but it works

Ingredients
  • 1 vadalia onion, chunk cut
  • 2 sm eggplants sliced into rounds
  • 3 sm zucchini sliced into rounds
  • Cherry tomatoes,
  • Baby portabellas
  • 1 to 2 tsp french herb rub
  • Sea salt
  • fresh cracked pepper
  • 1 - 2 Tbs olive oil
  • Shredded Swiss cheese

Directions
  1. Put olive oil in a saute pan, add onions and saute until almost transparent.
  2. Add eggplants, zucchini, mushrooms, french herb rub, salt and pepper, saute till there is a little color
  3. Add cherry tomatoes, heat until they pop.
  4. Dish up and sprinkle with swiss cheese
