How to make it

  • put the capsicum , pasta sauce and chopped thyme in a bowl and mix well.
  • Melt have the butter in a large nonstick frying pan over high heat and cook the fish for 1 minute .
  • Add the remaining butter as you go.
  • Turn the fish over and pour on the capsicum mixture.
  • Simmer for 10 minutes or until the fish is cooked.
  • Season to taste and garnish with thyme springs.
  • Serve with roasted potato slices and crusty bread to soak up the juices.
