Ingredients
  • Small red capsicum ( pepper ) thinly sliced
  • 250 g ( 1 cup ) bottled pasta sauce
  • 1 tbsp. chopped thyme
  • 40g ( 1 1/2 oz ) butter
  • 4 large skinless perch or snapper fillets
  • thyme spring for garnish

Directions
  1. put the capsicum , pasta sauce and chopped thyme in a bowl and mix well.
  2. Melt have the butter in a large nonstick frying pan over high heat and cook the fish for 1 minute .
  3. Add the remaining butter as you go.
  4. Turn the fish over and pour on the capsicum mixture.
  5. Simmer for 10 minutes or until the fish is cooked.
  6. Season to taste and garnish with thyme springs.
  7. Serve with roasted potato slices and crusty bread to soak up the juices.
