Fish provencale

- Small red capsicum ( pepper ) thinly sliced shopping list
- 250 g ( 1 cup ) bottled pasta sauce shopping list
- 1 tbsp. chopped thyme shopping list
- 40g ( 1 1/2 oz ) butter shopping list
- 4 large skinless perch or snapper fillets shopping list
- thyme spring for garnish shopping list
How to make it
- put the capsicum , pasta sauce and chopped thyme in a bowl and mix well.
- Melt have the butter in a large nonstick frying pan over high heat and cook the fish for 1 minute .
- Add the remaining butter as you go.
- Turn the fish over and pour on the capsicum mixture.
- Simmer for 10 minutes or until the fish is cooked.
- Season to taste and garnish with thyme springs.
- Serve with roasted potato slices and crusty bread to soak up the juices.
