Fresh Skillet Creamed Field Corn Recipe
I look forward to summer and fresh field corn..Its not sweet corn. But is a wonderful side dish for southern fried chicken or fried salt pork.

Ingredients
  • 12 ears of fresh field corn shucked and silked
  • 2 cups of water
  • 1/2 a stick of butter
  • 6 slices of bacon chopped (your going to crumble this later)
  • salt and pepper to taste

Directions
  1. shuck and clean corn
  2. cut corn off the ears (i just skin the tops off the kernels with a sharp knife you dont want to cut the whole kernel off or you can use a corn cutter) scrape down the ears to get the liquid .conbine cut corn with the liquid and set aside .
  3. in a large cast iron skillet fry the bacon until crisp and set aside.
  4. leave the bacon drippings in the skillet
  5. turn heat to med and add the corn stirring frequently so it wont stick.
  6. as the corn starts to swell add water a little at a time as needed.
  7. contiune cooking over low heat for 30 minutes .
  8. it may take more than 2 cups of water depending on the starch level of the corn you want it creamy.
  9. after 30 minutes add te butter and crumbled up bacon to the corn
  10. salt and pepper to taste.
  11. serve and enjoy
