How to make it

  • shuck and clean corn
  • cut corn off the ears (i just skin the tops off the kernels with a sharp knife you dont want to cut the whole kernel off or you can use a corn cutter) scrape down the ears to get the liquid .conbine cut corn with the liquid and set aside .
  • in a large cast iron skillet fry the bacon until crisp and set aside.
  • leave the bacon drippings in the skillet
  • turn heat to med and add the corn stirring frequently so it wont stick.
  • as the corn starts to swell add water a little at a time as needed.
  • contiune cooking over low heat for 30 minutes .
  • it may take more than 2 cups of water depending on the starch level of the corn you want it creamy.
  • after 30 minutes add te butter and crumbled up bacon to the corn
  • salt and pepper to taste.
  • serve and enjoy
