Easy Champagne Strawberry Soup Recipe
a wonderful cold fruit soup, use for dessert or appetizers

Ingredients
  • 4 cups water
  • 9 cups strawberries
  • 1 cup sugar
  • 1 lemon juiced
  • 1/2 cup champagne
  • 6 mint leaves for soup and more mint leaves for garnish
  • Lime sorbet or vanilla ice cream

Directions
  1. Time does not include 3 hour chill
  2. Bring all to a boil in saucepan except mint leaves and ice cream.
  3. Simmer 10 minutes.
  4. Then add mint leaves.
  5. Cool, blend and strain well.
  6. Chill very well at least 3 hours
  7. Place chilled soup in bowls and garnish with fresh mint leaves and a little scoop of lime sorbet
