How to make it

  • Time does not include 3 hour chill
  • Bring all to a boil in saucepan except mint leaves and ice cream.
  • Simmer 10 minutes.
  • Then add mint leaves.
  • Cool, blend and strain well.
  • Chill very well at least 3 hours
  • Place chilled soup in bowls and garnish with fresh mint leaves and a little scoop of lime sorbet
