Any Weather Cauliflower Soup Recipe
I make this one in all types of weather, hot or cold. It's simple and flavorful, one of my favorite soups and makes a great quick meal.

Ingredients
  • 3 Tbsp. oil
  • 1 onion
  • t tsp dill
  • 1 head of sliced cauliflower
  • 6 cups water
  • 5 cups potatoes, diced
  • 3 bay leaves
  • 1/2 tsp tamari
  • salt and pepper to taste
  • 1 cup corn

Directions
  1. Saute oil, onion and dill till onions are clear.
  2. Add the sliced cauliflower and saute for 5 minutes more.
  3. Add the water and the potatoes, cover pot and simmer for 30 minutes.
  4. Puree 4 cups of this mixture. ( I simply put my stick mixer into the pot of soup and roughly mix it, leaving lots and lots of chunks)
  5. Add 3 bay leaves, the tamari, salt, pepper and corn.
  6. Simmer an additional 25 minutes.
