Ingredients
  • 7 three cheese and pepper sausages Cut in 1/2 inch pieces
  • 3 garlic cloves chopped
  • 1 sm onion chopped
  • 1 cup mushrooms chopped
  • 1 lg can crushed tomatoes
  • 1 red bell pepper chopped
  • 1 zucchini chopped
  • 1/2 cup sweet peppers chopped
  • 1 jalapeno pepper seeded and chopped
  • 2 or 3 celery ribs chopped
  • 1/2 tsp nutmeg
  • 1tsp basil
  • salt and pepper to taste
  • 2 4cup boxes vegetable stock
  • cornstarch and water to thicken to your liking.

Directions
  1. Saute sausage, onion, and garlic in heavy stockpot for 4-5 min.
  2. Add mushrooms, tomatoes, peppers, zucchini, celery and seasonings. Cook for 2-3 minutes.
  3. Add stock. Bring to a boil then reduce heat, cover and simmer for 20-30 minutes.
  4. At this time you can decide if you want it a little thicker, and add cornstarch mix.
