Chicken Red Peppers And Squash On Linguine Recipe
Came up with this one when I had one of those cravings for something creamy and these are the ingredients I threw together. Not only delicious, but beautiful, too. One of our favorites now - feel free to use any veggies that sound good to YOU!

Ingredients
  • 1 pound linguini, cooked
  • 3 tablespoons olive oil
  • 6 boneless skinless chicken breasts, sliced into strips
  • seasoned salt, to taste (Jane's Crazy Salt)
  • 3 cloves garlic, minced
  • 1/2 vidalia onion, sliced
  • 2 small carrots, sliced into 1/8" coins
  • 1 large red pepper, cut into 1/2" squares
  • 1 small yellow squash, sliced in half lengthwise and cut into 1/8" pieces
  • 1 package ranch-style dressing mix
  • 1 tablespoon chicken bouillon granules (heaping)
  • 1/2 cup half and half
  • 1 pint nonfat plain yogurt
  • 1/2 cup nonfat plain yogurt
  • 3 tablespoons cornstarch

Directions
  1. Saute chicken in oil until browned. Remove, set aside and add the garlic, onion, carrots, red pepper and squash. Saute veggies about 5 minutes and add: ranch dressing mix, soup base, half & half and 1 pt. plain yogurt. Stir well, add chicken and cover and simmer 15 minutes. Stir in the remaining yogurt mixed with the cornstarch. Cook and stir until thickened.
  2. Serve over cooked linguini. Or you could use rice, too.
