Chicken Red Peppers and Squash on Linguine

- 1 pound linguini, cooked shopping list
- 3 tablespoons olive oil shopping list
- 6 boneless skinless chicken breasts, sliced into strips shopping list
- seasoned salt, to taste (Jane's Crazy Salt) shopping list
- 3 cloves garlic, minced shopping list
- 1/2 vidalia onion, sliced shopping list
- 2 small carrots, sliced into 1/8" coins shopping list
- 1 large red pepper, cut into 1/2" squares shopping list
- 1 small yellow squash, sliced in half lengthwise and cut into 1/8" pieces shopping list
- 1 package ranch-style dressing mix shopping list
- 1 tablespoon chicken bouillon granules (heaping) shopping list
- 1/2 cup half and half shopping list
- 1 pint nonfat plain yogurt shopping list
- 1/2 cup nonfat plain yogurt shopping list
- 3 tablespoons cornstarch shopping list
How to make it
- Saute chicken in oil until browned. Remove, set aside and add the garlic, onion, carrots, red pepper and squash. Saute veggies about 5 minutes and add: ranch dressing mix, soup base, half & half and 1 pt. plain yogurt. Stir well, add chicken and cover and simmer 15 minutes. Stir in the remaining yogurt mixed with the cornstarch. Cook and stir until thickened.
- Serve over cooked linguini. Or you could use rice, too.
