Light Broiled Haddock Recipe

Ingredients
  • 2 lbs. haddock filets (I'm pretty sure this will work for just about any ocean whitefish!)
  • 1/2 stick frozen (yep!) butter or low-fat butter replacement
  • 1 lemon
  • 1/2 -1 cup seasoned breadcrumbs
  • 1 c. Miracle Whip Free
  • 1/3 cup skim milk
  • 1/4 tsp. marjoram
  • 1/2 tsp. dried parsley flakes
  • 1/2 c. slivered almonds

Directions
  1. Combine marjoram to 1/2 c. breadcrumbs
  2. Butter or Pam 13x9x2 Pyrex baking pan (for crispier all-around filets, put a heavy cooling rack and foil on the bottom instead of butter)
  3. Finely coat bottom of baking pan with seasoned breadcrumbs (without marjoram) if you're not using the rack
  4. Wash haddock (or whatever scrod you're using) well and then dry on paper towel
  5. Whisk and combine 1/3 cup milk and Miracle Whip Free in mixing bowl--don't let it get too thick... add milk as necessary
  6. Soak fish in milk /MWF in mixing bowl (salt if necessary--oddly enough, I never use salt in my recipes!)
  7. Roll filet in breadcrumb mixture (with marjoram)
  8. Placed breaded filet on breadcrumb coating (or rack)
  9. Grate frozen butter with cheese grater over breaded filets (substitute low-fat spray margarine ad. lib.)
  10. Sprinkle with parsley and slivered almonds
  11. Place thinly sliced lemon on top of almonds and parsley
  12. Bake for 20-25 minutes at 350
  13. Serves nicely with stuffing, rice or grill-fried zucchini
