Tomato Pie Recipe
An Australian (I think) version of the dinner pie. Tomatoes, pork chops, and mashed potatoes all combine to make a fantastic, simple, filling meal in a pot.

Ingredients
  • 4 large beefsteak tomatoes
  • 1 lb deboned pork or beef chops
  • 1 Tbsp butter
  • 4 medium potatoes
  • 1 Tbsp milk
  • Salt and pepper to taste

Directions
  1. Preheat oven to 375.
  2. Skin and slice the tomatoes and use them to line the bottom of a pie plate.
  3. Place chops on top of tomatoes.
  4. Add salt and pepper to taste; cover with the rest of the tomatoes.
  5. Peel and mash the potatoes, cold.
  6. Warm milk and butter and add them to the potatoes.
  7. Cover the pie with this as a crust, and bake for 75 minutes.
